Jini Dosa Recipe : Indian Street Food Recipe
Jini dosa is a very popular street food dish. Jini dosa or Jini Roll Dosa is also know as fancy dosa, there are so many varieties in fancy dosa and jini dosa is one of them. I am also sharing the secret jini dosa batter which is very different from the traditional dosa batter. Jini Dosa batter made from Rawa/Soji and Gram Flour and Which requires less fermentation time.
Ingredients:
For Dosa Batter: (Makes 8-10 Medium Size Dosa)
1 Cup Rawa
1/4 Cup Gram Flour
2 tbsp Curd
Salt to Taste
Water as Required
For Jini Dosa:
1 tbsp Butter
1/2 tsp Garlic Paste
1 tbsp Chopped Onion
1 tbsp Chopped Capsicum
1 tbsp Chopped Cabbage
1/4 tsp Chaat Masala
1 tbsp Schezwan Chutney
1 tsp Tomato Ketchup
1/4 tsp Pavbhaji Masala
Salt to Taste
1/4 tsp Red Chilly Powder
1 tsp Chopped Coriander
1 tsp Butter
1 Cheese Cube
Directions:
- Firstly, pour a ladle full of dosa batter on hot tawa and spread gently.
- Now rub butter evenly keeping the flame on low.
- Further add 2 tbsp onion, 2 tbsp cabbage and 2 tbsp capsicum.
- Also add ½ tsp schezwan sauce, 2 tsp tomato sauce, ¼ tsp pav bhaji masala, 1 tsp butter and pinch salt.
- Mix well and spread the stuffing covering the entire dosa.
- Cut the dosa into thin strips using a pizza cutter or sharp knife.
- Further grate 2 tbsp mozzarella cheese / cheddar cheese uniformly.
- Simmer till the dosa turns crisp and cheese melts completely.
- Scrape the dosa strips and roll tight.
- Finally, serve jini dosa topped with more cheese and spring onion.
